Patisserie Fouet is a French-inspired Japanese Bakery in New York City. The design takes cues from all cultures and strives to blend them into a unique expression of its identity.

Defining the dining area is its cave-like vaulted ceiling, covered in white textured Japanese stucco, which gently reflects ambient light into the calm quiet sitting space. Café type seating with marble table tops are aligned along the wall, allowing the customer to experience the vault and textured stucco up close. The other edge of the vault transitions to a low soffit covered in smooth Japanese stucco, hovering over the walnut bar counter below. The soffit and the counter together, provides a horizontal portal through which you can observe and interact with the chef while they prepare your order behind the bar. Extending towards the front of the bakery, the walnut counter interlocks with a L-shaped marble counter which house the glass cold display for cakes and pastries. The display filled with colorful and ornate products is positioned at the front of the bakery, drawing people in from the street and greeting them as they walk into the space.
To draw attention to the baked goods, the material palette within the space is mostly restrained to the use of natural material and finishes. Various materials, such as basalt stone, marble tile, and wood blocks, differing in size and materiality, are applied to the existing walls and floor, but all in a consistent offset rectangular pattern. Brass light fixtures and turquoise blue bar stool is used to add an accent of color to the space.
